These were inspired by street food, though I guess shredded radish is used more often. This snack is easy to make and great for a picnic. You don't have to worry about dirtying your hands at a time when washing them isn't so convenient.
12 pieces of "pocket" tofu (deep-fried tofu cubes)
1 cucumber, shredded
1/4 tsp salt
1 tsp sesame
1 tsp brown sugar
2 tsp balsamic vinegar
1. Add salt to the shredded cucumber and mix well.
2. Dig a hole in each piece of tofu and fill with cucumber. Place on skewers.
3. Sprinkle on the sesame, sugar, and vinegar, and voilà, bon appétit!
