Should you desire to really learn authentic Sichuan cooking note that there is a new TWO WEEK intensive training program give at China's top culinary college the Sichuan Higher Institute of Cuisine.
The program is given bi-annually in March and October and limited to 12 students - so each participant can have their own wok.
The curriculum is designed by Fuchsia Dunlop - award winning cookbook author of Land of Plenty (the first English cookbook to focus on Sichuan cuisine). The classes are given by regular college professors, with an English translator present. By the time you complete the course, you'll have enough skills to make an entire Sichuan banquet.
