i've heard that there are buses running between wolong and Dujiangyan bus station(都江堰市长途汽车站) several times a day. you may take a bus from Chengdu Chadianzi bus station to Dujiangyan bus station, it will take about one hour. or you may take the recently operated high train, which will take about only 20 minutes from chengdu to dujiangyan. good luck.
i know nothing about the latest condition of wolong. but if you are going after pandas, there is a panda research base very closed to chengdu city, it's called 大熊猫繁殖基地, 10km away from chengdu city. there are lots of pandas living there. tourists could spend hours enjoying the fun of being closed to those cute creatures.
the first one, could be Dandan mian (担但面, shoulder pole noodle), Zhazha mian (渣渣面, powder noodle), or Ran mian (燃面, burning noodle), they are all one kind of Liang mian (凉面, cold noodle).
according to your description, i guess Ran mian would be the best match. it's popular in the area of South Sichuan.
the best sichuan food i've ever had in North America is in a restaurant, Chinatown, Toronto. the name of the restaurant is Sichuan Garden Restaurant (川味轩, 416-593-6265). they definitely have the shuizhu roupian and dandan mian. I am not sure if they have the ran mian as well.
If you don't mind talk to someone who don't know English, I found this website claiming they can provide rye flour (黑麦面粉). it is in a 1.5kg package.
